Sort and wash the lentils. Do not soak them. Put the bacon into 4 1/4 pints of cold water, bring to a boil, skim. Add the carrots, onions, whole unskinned garlic clove and the bouquet. Cook for an hour then add the lentils. Cook over a very moderate heat to prevent the lentils from bursting. Prick the sausages, brown in lard over a low heat. When the lentils are cooked, add the sausages, pepper, cover, leave over a low heat until the sausages are cooked through. When well cooked, this dish is absolutely delicious.
